SALMON WITH BLACK GARLIC GLAZE
INGREDIENTS (serves 2)
600g salmon fillet
8 tablespoons soy sauce
6 tablespoons brown sugar
8 tablespoons olive oil
6 black garlic cloves
1 tablespoon lemon juice
2 tablespoon of fresh grated ginger
1 tablespoon of grated lemon grass
Zest of 1 lemon
salt & pepper to taste
200 gr White rice
200 gr green peas
200 gr spinach
INSTRUCTIONS
Season salmon with salt & pepper.
Cut the garlic rough and add to a blender with the soy, brown sugar, 4 tablespoons olive oil, lemon juice, ginger, lemon grass, zest and salt and pepper.
Place your salmon in the pan with the black garlic sauce and fry for about 8-10 minutes (or to your liking), coating it with the sauce during cooking. You can use a lid to speed the process of cooking up.
Meanwhile, cook the rice and add the peas for the last 3 minutes.
Sauté the spinish to taste.
